flakes

I took a snow day yesterday, which I rarely do.  Every time I go to work in the snow I get totally stressed about the drive home, so I decided to be kind to myself. 

My ears and throat have been a bit sore, so I was happy to have a day at home to drink fluids so my immune system could put up a good fight.  Whenever I feel a cold coming on, I drink hot water mixed with a drizzle of local maple syrup (agave nectar, honey, or brown rice syrup works too), cayenne, fresh ginger (I use a garlic press to “juice” the ginger), and the juice from half a lemon.  It may be mental, but I truly think it helps, especially when I have a sore throat.  Speaking of juicing lemons, do you have one of these? 

 

I bartended in college and suffered from “lemon juice on a small finger cut” way too many times.  I absolutely love my lemon juicer.

Anyhow . . . snow flakes weren’t the only flakes my boy played with yesterday.

I bought quinoa flakes at Whole Foods last weekend.  I planned to change things up and use them instead of oats for my typical weekday breakfasts.  The hubby and I both tried them as such on Monday, and neither of us was thrilled.  I like some texture in my oats (love me some steel cut oats), and the quinoa flakes were a bit too reminiscent of the Earth’s Best rice cereal my boy used to feed our dog I fed my boy when he was 6 months old.  I probably would have liked them better hot, but I have very limited time on weekday mornings and enjoy slower cooking breakfasts on the weekend.  So, I decided their fate would be in baked goods.

Vegan Quinoa Cookies (or Bars)

2 1/2 cups quinoa flakes

¼ cup almond butter

3/4 cup apple juice

¼ cup ground walnuts

1/3 cup raisins

¼ cup sunflower seeds

½ cup chocolate chips (or more 😉 )

1-2 tablespoons agave nectar (more if you want a sweeter cookie)

Preheat oven to 350.  Mix all ingredients in a mixer. For cookies: spoon scoops of dough onto a baking sheet (this is my boy’s favorite part, so you will never see evenly sized cookies on my blog).  For bars: press dough into a 9.5 x 11 inch pan. 

We made half into cookies and pressed the rest into a loaf pan to make bars.  For cookies: bake for 12 minutes.  For bars: bake for 20 minutes.  I liked the bars better; unfortunately I only took a picture of the cookies.   The quinoa flakes worked out really well for baking.  They are really thin and worked like flour.  And chocolate chips make everything taste better . . .

    Sorry you didn’t like the quinoa flakes but I’m glad I read this because I almost bought them too. I hate committing to big boxes of things I haven’t tried because I HATE wasting food. At least cookies came out of it!
